Creamy Potato Casserole (Funeral Potatoes)

This creamy potato casserole is truly for everyone at the table. It's packed with flavor, and easily made gluten-free and dairy-free! No one has to miss out on this classic comfort dish, thanks to Clean Monday Meals and a few simple swaps.
Ingredients:
- 1 (30–32 oz) bag frozen shredded hash browns, thawed
- 1 tablespoon Clean Monday Meals Ranch Seasoning
- 2 teaspoons Clean Monday Meals Everyday Beef Seasoning, divided
- 1 cup Clean Monday Meals Cream of Chicken powder
- 1 1/2 cups hot water (or broth)
- 6 tablespoons butter (or plant-based butter substitute), divided
- 1 cup sour cream (or a dairy-free sour cream/yogurt alternative)
- 2 cups shredded cheddar or mixed cheese (or dairy-free shredded cheese), divided
- 1 cup crushed Gluten-Free cornflakes or potato chips
Instructions:
- Prep the Cream Sauce Base: In a medium bowl, whisk the Clean Monday Meals Cream of Chicken powder and hot water (or broth) until a smooth sauce forms.
- Add Fat and Sour Cream: Melt 4 tablespoons of the butter and stir it into the cream sauce mixture. Then, stir in the sour cream until the mixture is uniform.
- Mix the Casserole Base: To a very large mixing bowl, add the thawed and drained hash browns. Add the entire creamy sauce, 1 tablespoon of Ranch Seasoning, 1 teaspoon of the Everyday Beef Seasoning, and 1 3/4 cups of the shredded cheese. Stir gently until the hash browns are evenly coated.
- Transfer to Pan: Pour the mixture into a greased 9x13 inch casserole dish.
- Prepare the Topping: Melt the remaining 2 tablespoons of butter. In a small bowl, combine the crushed GF cornflakes (or chips), the remaining 1/4 cup of shredded cheese, the melted butter, and the remaining 1 teaspoon of Everyday Beef Seasoning.
- Top and Bake: Sprinkle the topping mixture evenly over the casserole. Bake in a 350∘F (175∘C) oven for 45−60 minutes, or until the sauce is bubbly and the topping is golden brown.
- Serve: Let the casserole rest for 5–10 minutes before serving.
