Easy One-Pan Picadillo
Serves: 4 | Prep Time: 10 minutes | Cook Time: 20–25 minutes
Tender potatoes, seasoned beef, and a zesty salsa base. This Picadillo is a family favorite that comes together in under 30 minutes. Clean ingredients, big flavor, and zero stress!
Ingredients:
- 1 lb ground beef
- 1.5 lbs yellow potatoes, cut into small bite-sized cubes
- 1 yellow onion, diced
- 1 tablespoon Clean Monday Meals Everyday Beef Seasoning
- 1 tablespoon Clean Monday Meals Chili Seasoning
- 1 cup beef broth (See note below)
- 8 oz jarred salsa (mild or medium)
- Optional: Shredded cheese for topping
Notes:

- Broth: You can easily make your broth by mixing 1 cup of water with 1 teaspoon of Clean Monday Meals Beef Bouillon.
- Substitutions: Ground turkey can be used in place of ground beef.
- Dairy-Free: Use your favorite dairy-free cheese alternative or omit the cheese entirely.
Instructions:
- Brown the ground beef and diced onion in a large skillet over medium-high heat until the beef is cooked through.
- Drain any excess grease from the skillet.
- Add the Everyday Beef Seasoning and Chili Seasoning to the drained meat and onions. Stir for about 30–60 seconds to let the spices toast and coat the beef.
- Add the cubed potatoes to the skillet and toss to combine with the seasoned beef.
- Pour in the beef broth and the salsa. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid.
- Simmer for 15–20 minutes, or until the potatoes are fork-tender and the sauce has thickened.
- Remove from heat and top with cheese if desired. Let it sit for a minute to melt before serving.
