Meet Janae

I come from a long line of Italian heritage, so you know we love our food.

I say I was raised in Orem, Utah but I also lived for a few years in Rexburg Idaho. I am a mother to five children Kolbie 16, McCoy 15, Weslie 11, Scottie 6, Cove 5, and a wife to an amazing husband, Kevin Cox. My life long dream was to become a mother, but before that happened, to pay the bills, I worked as a Dental Assistant.

Several years ago, I started a simple Instagram page called @cleanmondaymeals with zero expectations of it growing into anything other than my place to share all my gluten-free meal prep ideas. You see, I haven’t been gluten-free my whole life. In 2014, after the birth of my third child Weslie I couldn't regain my health. I just couldn’t seem to get back to my normal self. I was constantly sick and after months of debilitating stomach pains, and other issues I needed answers. I was misdiagnosed several times, changed doctors, and finally, through a biopsy of the small intestine, they confirmed the celiac diagnosis.

I am frequently asked what my symptoms were so I’ll list out the major ones:

After starting my new gluten-free lifestyle, I quickly realized how overwhelming it all is and can be. I assumed I wasn’t alone, and every time I found a fantastic product or got a new recipe to work, I had to share it. Those simple posts are what has led me to here. Crazy right?

I have been very blessed, and try to remind myself of that every day because I too am not without trials. I am learning to live with Celiac Disease, PCOS, and all of the problems those illnesses offer.

I never imagined I'd be creating cookbooks, let alone getting my products on store shelves. My journey started simply from a desire to give back to those facing the same struggles I have—and continue to face. Whether you're tackling gluten-free or dairy-free eating, or just trying to serve your family healthy, delicious meals, we're all in this together!

I absolutely love meal prepping and finding ways to make life easier.

Being a mom with and having a daughter with an autoimmune disease is challenging enough, and I hope that by sharing what works for us, I can inspire and assist you on your journey, no matter where you are.

The recipes and tips I share come from real experiences, and I promise to only endorse products I truly believe in and would invest my own money on them.

Are all of your products gluten-free and dairy-free?

Yes! Every product we make is 100% gluten-free, dairy-free, and soy-free — no exceptions. We’re Celiac-safe and created our blends with food allergies in mind.

Do your products contain seed oils, MSG, or fillers?

Nope. We never use seed oils, artificial flavors, MSG, or fillers. Just real, whole food ingredients you can actually pronounce.

Are your products safe for people with food allergies?

Allergen Control: 

Our manufacturing facilities prioritize allergen control and food safety, adhering to strict protocols approved and inspected by the Utah Department of Agriculture and Food (UDAF) and the Good Manufacturing Practices (GMP) certification process. These measures help minimize the risk of cross-contact and ensure the highest level of food safety.

To prevent cross-contamination, we implement the following controls: 

  • Dedicated sanitation procedures, including full equipment washdowns and ATP swab testing to verify cleanliness between production runs. 
  • Production scheduling strategies to separate allergen-containing products from non-allergen runs when possible. 
  • Strict raw material handling and storage procedures to keep allergens segregated.
