Pork Medallions Simmered in a Mushroom Cream Sauce

Craving a cozy, yet elegant dinner? Sink your teeth into these incredible pork medallions simmered in a rich, creamy mushroom sauce. For a quick and easy sauce, you can use Clean Monday Meals Cream of Mushroom Soup! We also used the Everyday Beef Seasoning and Beef Broth to get that deep, savory flavor you'll love.

Ingredients:
  • 1–1.5 lbs pork tenderloin, sliced into 1-inch medallions

  • Olive oil, for searing

  • 1 tablespoon Clean Monday Meals Everyday Beef Seasoning

  • 2–3 tablespoons salted butter (or a plant-based butter)

  • 4–6 oz sliced fresh mushrooms

  • 1–1.5 tablespoons minced garlic

  • 3 cups Beef broth (or 3 tablespoons Clean Monday Meals Beef Bouillon and 3 cups of water)

  • ½ cup Clean Monday Meals Cream of Mushroom powder

  • 8–12 oz sour cream (or a dairy-free sour cream or full-fat coconut cream)

Instructions:
  1. Prepare and Sear Pork: Slice the pork tenderloins into 1-inch-thick medallions. Season both sides with Clean Monday Meals Everyday Beef Seasoning. Heat a large skillet or pan over medium-high heat with a drizzle of olive oil. Sear the pork medallions on both sides until browned.

  2. Sauté Aromatics: While the pork is searing, melt the salted butter in a separate, large pot or Dutch oven over medium-high heat. Once the butter is hot and bubbly, add the sliced mushrooms and minced garlic. Sauté until the mushrooms are tender and browned.

  3. Simmer Pork: Once the pork medallions are seared, transfer them to the pot with the mushrooms and garlic. Pour in the beef broth (or prepared bouillon broth) to cover the pork medallions. Stir and bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let the pork simmer for 30–40 minutes, or until fork-tender.

  4. Thicken the Sauce: After the pork has simmered, uncover the pot and remove about ½ cup of the hot broth/liquid into a small bowl. Whisk the dry Cream of Mushroom powder into this hot liquid until a smooth slurry forms with no lumps.

  5. Finish Thickening: Pour the powder mixture back into the pot, stirring continuously. Bring the sauce to a gentle simmer, allowing it to thicken into a gravy-like consistency. This will take about 2–3 minutes.

  6. Add Sour Cream: Turn off the heat and stir in the sour cream until it's fully combined and the sauce is creamy. Do not bring the sauce back to a boil after adding the sour cream, as it may curdle.

  7. Serve: Season with additional salt to taste. Serve the pork medallions and sauce generously over rice, egg noodles, or mashed potatoes.
