Coconut Curry Chicken with Jasmine Rice

Ingredients:
- 1.5 cups uncooked Jasmine rice (prepared according to package directions)
- 1 lb chicken breast or thighs, cut into bite-sized pieces

- 1 tablespoon olive oil or coconut oil
- 1 to 2 tablespoons red curry paste (for color and mild spice)
- 1/4 cup red bell pepper, very finely diced
- 2 (13.5 oz) cans full-fat coconut milk (or 1 can coconut milk + 1 cup chicken broth)
- 1/2 cup Clean Monday Meals Cream of Chicken Powder
- 1 tablespoon lime juice
- 1 tablespoon honey or coconut sugar
- Fresh cilantro and lime wedges for garnish
Instructions:
- Prepare the Jasmine rice according to the package instructions so it is fresh and fluffy for serving.
- In a small bowl, toss the chicken pieces with 1 teaspoon of Everyday Beef Seasoning until evenly coated.
- Heat the oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook until browned and cooked through (about 5–7 minutes). Remove the chicken from the pan and set aside.
- In the same pan, add the curry paste and the very finely diced bell pepper. Stir-fry for about 1 minute until fragrant.
