Spaghetti night, elevated and clean! Our Roasted Spaghetti Squash Noodle Nest Bowl uses roasted squash rings seasoned with CMM Everyday Beef to create long, tender veggie noodles. Top with our chunky CMM Italian Seasoning meat sauce for a 100% gluten-free meal the whole family will adore!
Ingredients:
For the Roasted Spaghetti Squash:
- 1 medium spaghetti squash, sliced crosswise into 1-inch rings and seeds scraped out
- 1–2 tablespoons olive oil
- 1 teaspoon CMM Everyday Beef Seasoning
- Salt and black pepper to taste
For the Meaty Marinara:
- 1 lb ground beef (or ground turkey)
- 1 jar (24 oz) gluten-free marinara / spaghetti sauce
- 1 can (14.5 oz) diced or chunky tomatoes
- 1–2 tablespoons CMM Italian Seasoning
For Serving:
- ½ cup shredded mozzarella or parmesan cheese (optional)
- Fresh basil or parsley for garnish
Instructions:
- Preheat your oven to 400°F and line a large baking sheet with parchment paper.
- Drizzle both sides of the spaghetti squash rings with olive oil, then season evenly with CMM Everyday Beef Seasoning, salt, and black pepper.
- Arrange the rings in a single layer on the prepared baking sheet. Bake at 400°F for 30 minutes until tender and lightly browned at the edges.
- While the squash is roasting, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart until fully browned. Drain any excess fat if needed.
- Stir the jar of marinara sauce, canned chunky tomatoes, and CMM Italian Seasoning into the beef. Reduce heat to medium-low and simmer for 10–15 minutes to let the flavors melt together.
- Remove the roasted squash rings from the oven. Using a fork, gently scrape and loosen the strands inside each ring to create a "nest" of squash noodles.
- Top each squash ring generously with a big scoop of the warm meaty marinara and a sprinkle of shredded cheese. Serve hot right out of the ring!
