Creamy Chicken Noodle Soup

This recipe transforms a classic chicken noodle soup into a rich, creamy, and deeply flavorful meal. Using Clean Monday Meals products, it's a simple one-pot recipe that feels like a warm hug in a bowl.
Ingredients:

1 pound boneless, skinless chicken breasts

1 teaspoon Clean Monday Meals Everyday Beef Seasoning

1 tablespoon olive oil

1 cup chopped carrots

½ cup chopped celery

1 cup cubed potatoes

6 cups water

¼ cup Clean Monday Meals Chicken Ramen Seasoning (or 6 cups prepared chicken broth)

2 packs ramen noodles (the seasoning packets will not be used in this recipe)

½ teaspoon black pepper (optional)

Fresh chopped parsley for garnish (optional)
Instructions:

Cook the Chicken: Drizzle olive oil in a large soup pot or Dutch oven over medium-high heat. Season the chicken breasts on both sides with Everyday Beef Seasoning. Add the chicken to the pot and cook for 5-7 minutes per side, until the internal temperature reaches 165°F. Remove the chicken from the pot and set it aside to cool.

Make the Broth and Cook Vegetables: Add the chopped carrots, celery, and potatoes to the same pot. Pour in the 6 cups of water and stir in the Chicken Ramen Seasoning. Bring the mixture to a simmer and cook for about 15 minutes, or until the vegetables are tender. While the vegetables simmer, shred the cooked chicken.

Add Noodles: Add the ramen noodle bricks whole to the simmering soup. Let them cook for about 5-7 minutes, using a spoon to break them apart as they soften.

Make the Soup Creamy: Once the noodles are cooked, stir in the Cream of Chicken powder and black pepper. Continue to stir until the soup becomes a creamy consistency.

Combine and Serve: Stir the shredded chicken back into the pot and mix well. If you desire a creamier soup, add a few more tablespoons of the Cream of Chicken powder. Serve hot, garnished with fresh parsley if you like.
Note: The soup will thicken as it stands. Add more broth or water if needed to reach your desired consistency.
