Ingredients:
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz gluten-free pasta (penne, fettuccine, or rotini)
- 2–3 tablespoons olive oil (divided)
- 2–3 tablespoons CMM Bayou Bold Seasoning (divided)
- 1 large bell pepper (sliced into thin strips)
- 1 medium yellow or red onion (sliced into thin strips)
- 1 cup heavy cream
- Optional: Fresh parsley or grated parmesan for serving
Instructions:
- Boil the gluten-free pasta in salted water according to package directions. Drain and set aside.
- Toss the cut chicken pieces with 1 tablespoon of olive oil and 1.5 to 2 tablespoons of CMM Bayou Bold Seasoning until heavily coated.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5–7 minutes until deeply seared and cooked through. Remove the chicken from the pan and set aside on a plate.
- Add the remaining olive oil to the same skillet along with the sliced bell peppers and onions. Sauté for 3–4 minutes until tender-crisp, scraping up the flavorful blackened bits from the bottom of the pan.
- Sprinkle the remaining ½ to 1 tablespoon of CMM Bayou Bold Seasoning directly over the vegetables and stir to bloom the spices.
- Pour in the heavy cream and bring to a gentle simmer for 2 minutes as the sauce thickens slightly.
- Add the cooked gluten-free pasta and the blackened chicken (plus any accumulated juices) back into the skillet. Toss everything together thoroughly until the pasta is coated in the creamy Cajun sauce and heated through. Serve hot!
