Chinese Chicken Salad

Chinese Chicken Salad

Serves: 8-10 | Prep Time: 45 mins

The "Ultimate" doesn't even cover it! This Loaded Chinese Chicken Salad is the star of the show. We’ve got the crunch from our Ramen Straws, the tang from the Sesame Dressing, and the savory kick from Cayt’s Favorite Chicken. 100% clean, 100% gluten-free, and 100% delicious.

Component 1: The Flavor-Combo Chicken

  • 1 ½ lbs chicken breasts, sliced thin
  • 2 tbsp olive oil
  • CMM Everyday Beef & CMM Teriyaki Mix (equal parts)
  • Instructions: Drizzle chicken with oil, season heavily with both mixes, and let marinate for 30 minutes. Grill or pan-sear until 165°F. Chill and slice for the salad.

Component 2: The Toasted Sesame Dressing

  • 1/2 cup rice wine vinegar
  • 4 tbsp CMM Teriyaki Mix & Marinade
  • 2 tbsp toasted sesame oil
  • 2 tsp honey
  • 2 tbsp toasted sesame seeds
  • Instructions: Whisk all ingredients in a jar until the honey is dissolved.

Component 3: The Crispy Ramen Straws

  • 2 packs CMM Ramen (noodles only)
  • 2 tbsp oil
  • 2 CMM Ramen Seasoning Packets
  • Instructions: Boil and drain noodles. Toss with oil and seasoning. Bake at 450°F for 15 minutes (tossing halfway) until crisp. Cool and break into "straws."

Component 4: The Salad Base

  • 4 cups green cabbage, shredded
  • 2 cups purple cabbage, shredded
  • 1 cup matchstick carrots
  • 1/2 cup green onions, sliced
  • 1 can (11 oz) mandarin oranges, drained

Final Assembly:

  1. In your largest bowl, toss the green cabbage, purple cabbage, and carrots together.
  2. Add the green onions, mandarin oranges, and the sliced Combo Chicken.
  3. Pour the Toasted Sesame Dressing over the top and toss thoroughly until the cabbage is well-coated.
  4. Just before serving, top with a generous amount of Crispy Ramen Straws to keep that crunch.
