
Powerhouse Salad

Clean eating doesn't have to be complicated. This Powerhouse Salad uses diced veggies and a simple SPOG dressing to create a nutrient-dense meal in minutes. It’s crunchy, savory, and the perfect side for any protein!
Ingredients:
- 4 Roma tomatoes, chopped
- 1 large English cucumber, diced
- 2 bell peppers (any color), diced
- 1/2 red onion, finely diced
- 1 cup shelled edamame (thawed)
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon Clean Monday Meals SPOG Seasoning (plus more to taste)
Instructions:
- Add the chopped Roma tomatoes, diced English cucumber, bell peppers, finely diced red onion, and edamame to a large mixing bowl.
- In a small jar or bowl, whisk together the olive oil, white wine vinegar, and 1 tablespoon of Clean Monday Meals SPOG Seasoning until the dressing is well combined.
- Pour the dressing over the vegetables and toss gently until every piece is evenly coated.
- Taste the salad and add an extra sprinkle of SPOG as needed to reach your desired flavor level.
- Serve immediately for maximum crunch or let it sit for 10 minutes to allow the vinaigrette to marinate the vegetables.
