Ingredients:
The Meat Sauce:
- 2 lbs ground beef
- 2–3 tablespoons CMM Everyday Beef Seasoning
- 1 jar (24 oz) marinara sauce
- 1 canned jar/can (14.5 oz) finely diced tomatoes
The Creamy Herb Cheese Layer:
- 1 large container (24 oz) cottage cheese
- 1 large egg
- ½ cup grated Parmesan cheese
- 1–2 tablespoons CMM Italian Seasoning
The Assembly:
- 1 package gluten-free lasagna noodles (oven-ready or pre-cooked according to package)
- 2–3 cups shredded mozzarella cheese
Instructions:
- Preheat your oven to 375°F and lightly grease a 9x13-inch baking dish.
- Make the Meat Sauce: In a large skillet over medium-high heat, brown the ground beef until cooked through. Drain excess grease. Sprinkle in the CMM Everyday Beef Seasoning, stir in the marinara sauce and finely diced tomatoes, and simmer on low for 5 minutes.
- Make the Cheese Filling: In a bowl, combine the cottage cheese, egg, grated Parmesan, and CMM Italian Seasoning. Mix until well blended and creamy.
-
Assemble the Lasagna:
-
- Spread a thin layer of meat sauce over the bottom of the prepared baking dish.
- Arrange a layer of gluten-free lasagna noodles over the sauce.
- Spread half of the creamy cottage cheese mixture evenly over the noodles.
- Top with a layer of meat sauce and a sprinkle of shredded mozzarella.
- Repeat the layers: noodles, remaining cottage cheese mixture, meat sauce, and mozzarella.
- Add a final layer of noodles, cover with the remaining meat sauce, and top generously with mozzarella cheese.
5. Cover the pan loosely with aluminum foil and bake at 375°F for 30 minutes.
6. Remove the foil and bake uncovered for an additional 15–20 minutes until the cheese is melted, golden, and bubbling at the edges.
7. Let rest for 10–15 minutes before slicing and serving so the layers set cleanly.
