Turkey Burrito Bowl
Ingredients:
- 1 cup diced onion
- 1/2 pound lean ground turkey
- 1 cup brown rice
- 2 cups salsa, no sugar added
- 2 teaspoons taco seasoning (recipe for taco seasoning below ππ»)
- 1 (15-ounce) can black beans, drained
- I (15-ounce) can corn kernels
- 2 cups diced tomato
- 1/4 teaspoon ground pepper
- 1/2 cup grated cheddar cheese, reduced-fat
Taco Seasoning:
- 1 tablespoon chili powder
- 1/2 teaspoon dried minced onion
- 1/2 teaspoon dried minced garlic
- 1 teaspoon oregano
- 1 1/2 teaspoons dried cilantro
- 1 teaspoon paprika
- 1 1/2 teaspoons ground cumin seeds
- 1 teaspoon black pepper
Instructions:
- Over medium heat, in a skillet, cook the onion and ground turkey. The turkey should be cooked until itβs no longer pink. Drain the turkey. Add the turkey, cooked rice, 1 cup salsa, 1 cup diced tomatoes, taco seasoning, corn, and beans. Bring to a boil, then lower the heat and simmer for about 5 minutes.
- Mix in the cheese. It will melt with the heat.
