This is not your average street corn! We took the classic zesty Elote, added deep, savory flavor with Clean Monday Meals Everyday Beef Seasoning, and finished it off with the perfect kick of Chili Seasoning. It’s tangy, creamy, and totally unforgettable.

Ingredients:

  • 4 cups sweet corn (fresh off the cob or frozen)
  • 2-3 tablespoons butter (or plant-based butter substitute)
  • 2 teaspoons Clean Monday Meals Everyday Beef Seasoning
  • 1 tablespoon Clean Monday Meals Chili Seasoning
  • 1/4 cup mayonnaise (or vegan mayonnaise)
  • Juice of 1 fresh lime
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled Cotija cheese (or vegan Parmesan alternative)
  • Black pepper to taste (optional)

Instructions:

  1. Prep the Corn: If using frozen corn, ensure it is thawed and drained.
  2. Heat Corn: Place a pot or saucepan over medium heat. Add the butter (or substitute) and let it melt until it just begins to sizzle. Add the corn and cook for about 5–7 minutes, stirring occasionally, until the corn is heated through and lightly caramelized.
  3. Season the Corn: Reduce the heat to low. Sprinkle the Everyday Beef Seasoning and the Chili Seasoning over the corn. Stir well to ensure every kernel is coated with the seasonings and butter. Cook for 1 minute more. Remove from heat.
  4. Mix and Serve: Stir in the mayonnaise (or vegan alternative), lime juice, and chopped cilantro.
  5. Finish: Transfer the corn to a serving dish and top generously with the crumbled Cotija cheese (or vegan Parmesan alternative). Serve immediately while warm.
