Ranch-It-Up Stir Fry

Serves: 1 | Prep Time: 2 minutes | Cook Time: 5 minutes

Stop eating boring ramen. We’re "Ranching it up" with butter, rotisserie chicken, and fresh spinach. It’s high-protein, full of herb-forward flavor, and ready before your favorite show starts its next episode.

Ingredients:

  • 1 pack Clean Monday Meals Ramen (noodles only)
  • 2 tablespoons butter (or vegan butter)
  • 1 tablespoon Clean Monday Meals Ranch Seasoning (to taste)
  • 1/2 cup shredded rotisserie chicken
  • 1 handful fresh spinach
  • Optional: A squeeze of lemon juice or extra red pepper flakes

Instructions:

  1. Bring a small pot of water to a boil. Add the ramen noodles and cook for 3 minutes (or according to package instructions).
  2. Drain the noodles completely. (Note: You can save the seasoning packet for another use or discard).
  3. In the same pot or a small skillet, melt the butter over medium heat.
  4. Toss the drained noodles into the butter and sprinkle with CMM Ranch Seasoning. Stir for 1 minute to ensure the noodles are evenly coated and the herbs become fragrant.
  5. Add the shredded rotisserie chicken and the fresh spinach.
  6. Sauté for another 1–2 minutes just until the chicken is warmed through and the spinach is slightly wilted.
  7. Serve immediately. It’s a 5-minute meal that tastes like an expensive herb-butter pasta!
