Mississippi Chicken

Coming home to the smell of CMM Mississippi Chicken is a total win. We swapped the mystery packets for our clean Ranch Seasoning to get that iconic tangy, buttery flavor without the fillers. Shred it up and serve it over mash!
Ingredients:
- 2 lbs boneless, skinless chicken breasts (or thighs for extra juiciness)
- 2 tablespoons Clean Monday Meals Ranch Seasoning
- 1/2 cup jarred pepperoncini peppers (plus 2 tablespoons of the brine)
- 4 tablespoons butter (or ghee/vegan butter), sliced into pats
- 1/2 teaspoon black pepper
- Optional: Serve over mashed potatoes, cauliflower rice, or in a gluten-free bun.
Instructions
Option 1: The Slow Cooker (Best for Shredding)
- Place the chicken in the bottom of the slow cooker.
- Sprinkle the CMM Ranch Seasoning and black pepper evenly over the chicken.
- Pour the pepperoncini brine over the top and scatter the whole peppers around the chicken.
- Place the butter pats on top of the chicken.
- Cover and cook on Low for 6–8 hours or High for 3–4 hours.
- Once finished, shred the chicken with two forks directly in the pot so it soaks up all the juices.
Option 2: Roasting (Best for a Quick Weeknight Dinner)
- Preheat oven to 400°F. Place chicken in a 9x13 baking dish.
- Season both sides of the chicken with CMM Ranch Seasoning and pepper.
- Add the pepperoncinis and brine to the dish. Place butter pats on each breast.
- Bake for 25–30 minutes (until internal temp reaches 165°F).
- Baste the chicken with the pan juices halfway through.
Option 3: Grilling (Best for a Smoky, Zesty Char)
- In a bowl, toss the chicken with 1 tablespoon of olive oil and the CMM Ranch Seasoning.
- Preheat grill to medium-high.
- Grill the chicken for 6–8 minutes per side until cooked through.
**The CMM Twist: While the chicken is resting, sauté the pepperoncini in a small pan with the butter and a splash of brine for 2 minutes. Pour this "Zesty Ranch Butter" over the grilled chicken before serving.
