Loaded Potato Taco Bowl

- 2 lb Potatoes (diced into ¾ inch cubes, about 2 medium potatoes per person)
- 2 tbsp Extra-virgin olive oil (Potatoes)
- 1/2 tbsp CMM everyday beef seasoning (Potatoes)
- 1 tbsp Extra-virgin olive oil (Beef)
- 1/2 Red onion (finely chopped, Beef)
- 2 tbsp CMM taco seasoning (Beef)
- 1 1/2 lb Ground beef
- 1/4 cup Water (Beef)
- 2 Avocados (Mashed)
- 1/4 bunch Cilantro (finely chopped, Guacamole)
- 1/4 Red onion (finely diced, Guacamole)
- 1 Juice of lime (Guacamole)
- 1/2 tsp Sea salt flakes (Guacamole)
- 1/4 tsp Cracked black pepper (Guacamole)
Instructions:
Potatoes (Oven or Air Fryer)
To oven bake:
1. Preheat oven to 425°F
2. On a lined baking tray, toss potatoes with oil, paprika, garlic powder, salt, and pepper. Spread evenly.
3. Bake 40–45 min, turning once halfway through, until crisp and golden. Use 2 trays if needed.
To air fry:
1. Preheat air fryer to 400°F
2. Cook potatoes in batches if needed, shaking halfway. Air fry 20–25 min or until golden and crispy.
Beef:
1. In a frying pan, heat oil over medium-high heat.
2. Add onion, cook 1–2 min until softened.
3. Add ground beef, cook 3–4 min, breaking it up.
4. Add taco seasoning. Stir 30 sec.
5. Add water and simmer 3–4 min until thickened.
Guacamole:
1. In a bowl, mix mashed avocado, cilantro, red onion, lime juice, salt, and pepper.
2. Cover and refrigerate until ready to serve.
To Serve:
1. Divide potatoes between 4 bowls.
2. Top with beef, sprinkle with cheese, and finish with guacamole and salsa.
3. Serve with lime wedges if desired.
