Lemon Pepper Chicken & Broccoli Casserole

The secret to the perfect casserole? Sour cream! We mixed our clean CMM Cream of Chicken Soup with sour cream and Lemon Pepper for the dreamiest Chicken & Broccoli bake you’ve ever had.

Ingredients:

  • 1.5 lbs chicken breast, cut into bite-sized pieces (Pre-cooked or rotisserie chicken works great!)
  • 1 lb broccoli florets (fresh or frozen)
  • 3 cups cooked white or brown rice
  • 2 cups Clean Monday Meals Cream of Chicken Soup (prepared)
  • 1 cup sour cream (Or dairy-free alternatives)
  • 2 tablespoons Clean Monday Meals Lemon Pepper (divided)
  • 1/2 cup shredded cheddar cheese (optional)
  • 1 tablespoon olive oil (if cooking raw chicken)
  • Salt to taste

Instructions:

  1. Preheat your oven to 375°F and grease a 9x13-inch baking dish.
  2. If using raw chicken: Heat olive oil in a skillet over medium-high heat. Add chicken and season with 1 tablespoon of CMM Lemon Pepper. Sauté until cooked through. If using pre-cooked chicken: Simply dice or shred the chicken and toss it with 1 tablespoon of CMM Lemon Pepper in a large bowl.
  3. In a large mixing bowl, whisk together the 2 cups of prepared CMM Cream of Chicken Soup and 1 cup of sour cream until smooth.
  4. Add the cooked rice, chicken, broccoli florets, and the remaining 1 tablespoon of CMM Lemon Pepper. Stir well until everything is evenly coated in the creamy sauce.
  5. Transfer the mixture to the prepared baking dish and spread it out evenly.
  6. Optional: Sprinkle shredded cheddar cheese over the top for a classic cheesy finish.
  7. Bake for 25–30 minutes until the casserole is bubbly and the broccoli is tender.
  8. Remove from the oven and let it sit for 5 minutes before serving to allow the sauce to set.
