Italian Grinder Salad

All the flavors of a classic Italian sub, minus the bread! This "Grinder" style salad is packed with savory salami, bold pepperoncinis, and a double helping of Parmesan cheese, all tossed in our homemade CMM Italian Dressing.
Ingredients:
- 1 English cucumber, diced
- 1 pint cherry or grape tomatoes, halved
- 1 can (15 oz) garbanzo beans, drained and rinsed
- 1 jar (12 oz) marinated artichoke hearts, drained and chopped
- 4–6 oz salami, sliced into bite-sized strips
- 1/2 cup sliced pepperoncinis
- 1/4 red onion, thinly sliced
- 1/2 cup shredded or shaved Parmesan cheese (plus extra for topping)
- 3/4 cup CMM Italian Dressing (or more to taste)
Instructions:
- Add the diced cucumber, halved tomatoes, rinsed garbanzo beans, and chopped artichoke hearts to a large mixing bowl.
- Toss in the sliced salami, pepperoncinis, and red onion.
- Add the Parmesan cheese to the medley.
- Pour the CMM Italian Dressing over the ingredients.
- Toss thoroughly to combine, ensuring the dressing reaches every ingredient.
- Let the salad marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Give it one final toss before serving and top with an extra sprinkle of Parmesan.
