Italian Grinder Salad

Italian Grinder Salad

Serves: 4–6 | Prep Time: 15 minutes

All the flavors of a classic Italian sub, minus the bread! This "Grinder" style salad is packed with savory salami, bold pepperoncinis, and a double helping of Parmesan cheese, all tossed in our homemade CMM Italian Dressing.

Ingredients:

  • 1 English cucumber, diced
  • 1 pint cherry or grape tomatoes, halved
  • 1 can (15 oz) garbanzo beans, drained and rinsed
  • 1 jar (12 oz) marinated artichoke hearts, drained and chopped
  • 4–6 oz salami, sliced into bite-sized strips
  • 1/2 cup sliced pepperoncinis
  • 1/4 red onion, thinly sliced
  • 1/2 cup shredded or shaved Parmesan cheese (plus extra for topping)
  • 3/4 cup CMM Italian Dressing (or more to taste)

Instructions:

  1. Add the diced cucumber, halved tomatoes, rinsed garbanzo beans, and chopped artichoke hearts to a large mixing bowl.
  2. Toss in the sliced salami, pepperoncinis, and red onion.
  3. Add the Parmesan cheese to the medley.
  4. Pour the CMM Italian Dressing over the ingredients.
  5. Toss thoroughly to combine, ensuring the dressing reaches every ingredient.
  6. Let the salad marinate in the refrigerator for at least 30 minutes to allow the flavors to meld.
  7. Give it one final toss before serving and top with an extra sprinkle of Parmesan.
