This is the ultimate comfort food, re-imagined! Our Chicken Pot Pie Casserole is creamy, rich, and features a light, flaky crust—and it’s entirely gluten-free and easily dairy-free! The savory sauce is thanks to the incredible Clean Monday Meals Cream of Chicken and Zest & Herb Seasoning. Get ready for pure nostalgia!

For the Gluten-Free Topping:

  • 2 cups Gluten-Free All-Purpose Flour Blend
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon Clean Monday Meals Ranch Powder (Optional)
  • 1/2 cup cold butter (or cold, solid plant-based butter substitute), cubed
  • 1 cup milk (or dairy-free milk alternative, chilled)

Instructions:

  1. Prepare the Filling Base:

    • Sauté Vegetables: Melt the butter in a large pot or Dutch oven. Add the onion, carrots, and celery. Sauté over medium heat for 8–10 minutes until tender.

    • Make the Gravy: In a separate bowl, whisk together the Cream of Chicken powder and the hot water until smooth. Stir in the Zest & Herb Chicken Seasoning and the 1/2 cup of milk.

    • Combine & Thicken: Pour the gravy mixture into the pot with the vegetables. Bring to a gentle simmer and cook for 2–3 minutes until the sauce slightly thickens. Remove from heat.

    • Finish Filling: Stir in the cooked chicken and frozen peas. Season with additional salt and pepper, if desired.

  2. Prepare the Topping:

    • Combine Dry Ingredients: In a large bowl, whisk together the GF flour, baking powder, salt, and the optional CMM Ranch Powder.

    • Cut in Butter: Cut the cold butter cubes into the flour mixture until the mixture resembles coarse crumbs.

    • Form Dough: Gradually stir in the 1 cup of chilled milk alternative until a soft dough forms. Do not overmix.

  3. Assemble and Bake:

    • Preheat: Preheat your oven to 400°F (200°C).

    • Assemble: Pour the entire chicken filling mixture into a greased 9x13 inch casserole dish. Drop spoonfuls of the biscuit dough mixture evenly over the top of the filling.

    • Bake: Bake for 35–40 minutes, or until the topping is golden brown and the filling is actively bubbling.

    • Serve: Let the casserole rest for 10 minutes before serving.
