Blackened Salmon over Arugula

Bring restaurant-quality seafood home! This Bayou Bold Blackened Salmon pairs a deeply seasoned, crispy zesty crust with rich, flaky salmon. Served over a fresh bed of peppery arugula with a squeeze of lemon, it's a vibrant, clean, and delicious low-carb meal!
Ingredients:
- 4 salmon fillets (skinless preferred)
- 2 tablespoons butter, melted (or avocado oil)
- 2–3 tablespoons CMM Bayou Bold Seasoning
- 4 cups fresh arugula
- Lemon wedges (for serving)
Instructions:
- Pat the salmon fillets completely dry with a paper towel.
- Brush both sides of the salmon generously with the melted butter.
- Sprinkle the CMM Bayou Bold Seasoning heavily over the salmon, pressing it down firmly to create a thick, even crust on the flesh.
- Heat a large cast-iron skillet over medium-high heat until it is smoking hot.
- Place the salmon fillets presentation-side down in the hot skillet. Sear undisturbed for 3–4 minutes until a deep, dark, flavorful crust forms.
- Carefully flip the fillets and cook for another 3 minutes, or until the salmon is cooked through and flakes easily.
- Arrange a generous bed of fresh arugula on your serving plates. Place the hot blackened salmon directly on top and finish with a squeeze of fresh lemon juice.
