Anti-Inflammatory Turkey & Sweet Potato Bowls

Ingredients:
Roasted Sweet Potatoes
•1 lb sweet potatoes, diced into ¾-inch cubes
•2 tbsp extra-virgin olive oil
•1 tsp ground turmeric
•½ tsp garlic powder
•½ tsp sea salt flakes
•¼ tsp cracked black pepper
Turkey Mixture
•1 tbsp extra-virgin olive oil
•½ red onion, finely chopped
•1 lb ground turkey (organic or pasture-raised if possible)
•1 tsp ground cumin
•1 tsp ground coriander
•1 tsp garlic powder
•1 tsp onion powder
•1 tsp dried oregano
•1 tsp sea salt flakes
•¼ tsp cracked black pepper
•2 tbsp carrot or beet puree (optional for extra nutrients)
•¼ cup water
Guacamole
•2 ripe avocados, mashed
•¼ bunch cilantro, finely chopped
•¼ red onion, finely diced
•Juice of 1 lime
•½ tsp sea salt flakes

Guacamole

•½ tsp sea salt flakes
Instructions:
Roast the Sweet Potatoes
1. Preheat oven to 425°F or air fryer to 400°F.
2. Toss sweet potatoes with olive oil, turmeric, garlic powder, salt, and pepper.
3. Spread on a parchment-lined baking tray (or in air fryer basket).
4. Roast 40–45 minutes (oven) or air fry 20–25 minutes, shaking halfway, until golden and crisp on the edges.
Cook the Ground Turkey
1. Heat oil in a skillet over medium-high heat.
2. Add onion and sauté 1–2 minutes until softened.
3. Add ground turkey and cook 4–5 minutes, breaking it up with a wooden spoon.
4. Add spices: cumin, coriander, garlic powder, onion powder, oregano, salt, and pepper. Stir for 30 seconds.
5. Add optional carrot/beet puree and water. Simmer 3–4 minutes until liquid evaporates.
Make the Guacamole
1. Mash avocados and mix with lime juice, red onion, cilantro, salt, and pepper.
2. Cover and refrigerate until ready to serve.
To Serve
1. Divide sweet potatoes among four bowls.
2. Top with turkey mixture.
3. Add generous dollops of guacamole.
