Serves: 6-8 | Prep Time: 15 minutes | Cook Time: 25 minutes
This isn't your grandma's sloppy joe mix! We elevated this classic comfort food with three layers of savory goodness: Everyday Beef, Onion Soup, and a kick of Chili Seasoning. The result? A rich, deep, and satisfying sauce that makes weeknights legendary!
Ingredients:
- 2 pounds lean ground beef
- 2 teaspoons Clean Monday Meals Everyday Beef Seasoning
- 1 tablespoon olive oil (optional, if beef is lean)
- 1 medium red bell pepper, finely chopped
- 1 medium green bell pepper, finely chopped
- 2 ribs celery, finely chopped
- 1 tablespoon Clean Monday Meals Onion Soup Mix
- 1-2 tablespoons Clean Monday Meals Chili Seasoning
- 1 (6 oz) can tomato paste
- 1 cup water
- Toasted buns (gluten-free recommended)
- Shredded cheese (optional, for topping)
Instructions:
- Heat oil (if using) in a large skillet or pot over medium-high heat. Add the ground beef and season with the Everyday Beef Seasoning. Cook, breaking up the meat, until it is almost completely browned.
- Stir in the finely chopped red bell pepper, green bell pepper, and celery. Continue to cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften. Drain any excess fat.
- Reduce the heat to medium-low. Stir in the Onion Soup Mix and the Chili Seasoning. Cook for 1 minute to bloom the spices.
- Add the tomato paste and water. Stir well until the tomato paste is fully dissolved and the sauce is uniform.
- Bring the mixture to a gentle simmer. Continue simmering for 10-15 minutes, or until the vegetables have softened to your liking and the sauce has thickened slightly.
- Spoon the sloppy joe mixture generously onto toasted buns. Top with a sprinkle of shredded cheese, if desired, and serve hot.
