Southwest Protein Power Bowl

Serves: 4 | Prep Time: 15 minutes | Cook Time: 20 minutes

A hearty, nutrient-dense bowl packed with protein and bold flavors. This bowl features a base of savory Spanish Rice or Quinoa, juicy Citrus Taco Chicken, and a variety of fresh toppings, all finished with our signature Southwest Ranch.

Ingredients:

  • 2 cups prepared CMM Spanish Rice or Southwest Quinoa (warm)
  • 1 lb chicken breast, prepared using the Citrus Taco Marinade
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (thawed or roasted)
  • 1 pint cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely diced
  • Southwest Ranch Dressing (prepared with CMM Taco and Ranch seasonings)
  • Fresh cilantro and lime wedges for garnish

Instructions:

  1. Prepare the CMM Spanish Rice or Quinoa and keep it warm.
  2. Heat a large skillet or grill over medium-high heat. Remove the chicken from the Citrus Taco Marinade and cook for 5–7 minutes per side until charred and cooked through (165°F).
  3. Let the chicken rest for 5 minutes, then slice into bite-sized cubes.
  4. To assemble the bowls, place a generous base of warm Spanish Rice/Quinoa in each dish.
  5. Top the rice with the cubed Citrus Taco Chicken, black beans, corn, cherry tomatoes, and diced cucumber.
  6. Add the diced avocado and a sprinkle of finely diced red onion for a flavor kick.
  7. Drizzle the Southwest Ranch Dressing over the top of the bowl.
  8. Garnish with fresh cilantro and a lime wedge. Serve immediately or portion into containers for a high-protein meal prep that lasts all week.
