
Beef and Ramen Noodle Teriyaki Stir-Fry

This quick, flavor-packed stir-fry features tender marinated beef, crisp vegetables, and Clean Monday Meals Ramen Noodles, all coated in a clean, savory teriyaki glaze.
Ingredients:
- 2 (3 oz) packages Clean Monday Meals Ramen Noodles
- 1 pound beef sirloin or flank steak, thinly sliced against the grain
- 2 teaspoons Clean Monday Meals Everyday Beef Seasoning
- 1 tablespoon Clean Monday Meals Teriyaki Seasoning (for marinade)
- 1 tablespoon olive oil or sesame oil
- 1 red bell pepper, thinly sliced
- 1 cup broccoli florets, snap peas, or carrots
- 3 tablespoons Clean Monday Meals Teriyaki Seasoning (for sauce)
- 1/2 cup water
Instructions:
- In a bowl or gallon-sized bag, toss the thinly sliced beef with the Everyday Beef Seasoning and 1 tablespoon of Teriyaki Seasoning. Let this marinate for at least 30 minutes, or prepare it in advance and store it in the refrigerator.
- Cook the ramen noodles according to package directions. Drain and set aside.
- Heat the oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for 3–4 minutes until browned. Remove the beef and set it aside, leaving any drippings in the pan.
- Add the sliced bell pepper and broccoli (or other vegetables) to the pan. Stir-fry for 3–5 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together the 3 tablespoons of Teriyaki Seasoning and 1/2 cup of water until the seasoning is fully dissolved.
- Return the beef to the pan. Pour the sauce mixture over the beef and vegetables. Bring to a simmer, stirring until the sauce slightly thickens and coats the ingredients.
- Add the drained ramen noodles to the pan and toss everything together to fully coat the noodles in the sauce. Serve immediately.
