Waffle Churros Ingredients: Your favorite homemade or frozen waffles (For frozen we love the Gluten-free ones from @traderjoes, @naturespathorganic, or even @kodiakcakes) Grass-Fed butter melted (Use @miyokoscreamery for Dairy-free option) Cinn     Instructions: Toast waffle in the toaster. Dip or brush with butter and then cover in cinnamon sugar mix. Cut them into bite-size pieces and serve. Enjoy!!

Gluten-Free Cowboy Quesadillas

Cowboy Quesadillas Ingredients:  1 cup Cooked rice 1/3 cup Black beans 2 cups Cooked chicken, diced 1/3 cup Frozen corn 2/3 cup Diced tomatoes 3 tbsp sliced green onion 1 1/2-2 cups Shredded cheese (Use @Violife cheese for Dairy-free option) 1/4 cup BBQ sauce (I use @stubbsbbqsauce) 6 tortillas (I use @sietefoods for gluten-free)  Dipping Sauce: Equal parts BBQ sauce and ranch dressing. 1/4 cup of each. Stir until well combined. Instructions:  Combine cooked rice, beans, chicken, corn, tomatoes, green onions, and shredded cheese. Add BBQ sauce and stir to combine all. Twice Baked Potatoes

Twice Baked Potatoes Step by step video Ingredients:  6 Potatoes 1/2 cup Sour cream 1/4 cup Ranch dressing 2 cup Shredded cheese 1 1/2 cup Bacon, cut up Salt and pepper (to taste) Instructions:  Preheat oven to 400°F. Bake potatoes for 1 hour. Next add bacon to oven and cook for 20-25 minutes. Once cooled cut them into small slices. When potatoes are cool, cut tops off. With a spoon, scoop out some of the potato, leaving about 1/4 inch of potato inside the skin. Combine the potatoes into a bowl and use a potato masher to mix remaining potato, sour cream, cheese, ranch, and bacon bits and scoop into the skins. Bake again in oven for 10-15 minutes. Enjoy!!...

Gluten-Free Black Bean Casserole

Black Bean Casserole Ingredients: Black beans (30 oz Cans, drained) 2 tsp Extra virgin olive oil 2 clove Garlic (Minced) 1/2 cup Vegetable broth 1 tsp Cumin 1/4 tsp Black pepper 1/4 tsp Salt 2 tbsp Fresh cilantro (Chopped) 6 Almond flour tortillas (I use @sietefoods brand) 12 oz Salsa 1 cup Shredded cheddar cheese (Use Violife for dairy-free) Instructions: Preheat oven to 375°F.
 Drain beans, and set aside. In the meantime, in a medium skillet, add oil; heat over medium-low heat. Add garlic, and sauté until tender, about 4 minutes. Add black beans and broth, and continue cooking for approximately 3 minutes. Add cumin, black pepper, salt, and cilantro; stir to combine.
