Taco Soup
Serves: 6-8 Prep Time: 10 minutes Cook Time: 20 minutes
This hearty, protein-packed soup is a "dump and go" favorite. Using two types of beans and a full jar of salsa, it provides deep, slow-simmered flavor in a fraction of the time. This recipe is naturally gluten-free and can easily be kept dairy-free.
Ingredients:
- 1.5 lbs ground beef
- 1 tablespoon Clean Monday Meals Everyday Beef Seasoning
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) cannellini beans, rinsed and drained
- 1 jar (16 oz) salsa (mild, medium, or hot)
- 1 can (14.5 oz) diced tomatoes (with juices)
- 1 cup corn (frozen, canned, or fresh)
- 4 cups CMM Beef Broth (prepared using 4 cups water + 4 tsp CMM Beef Broth base)
- 2 tablespoons Clean Monday Meals Taco Seasoning
- 1 tablespoon Clean Monday Meals Chili Seasoning
- Toppings (Dairy-Free optional): Avocado, fresh cilantro, lime wedges, dairy-free sour cream, or dairy-free shredded cheese
Instructions:
- In a large pot or Dutch oven over medium-high heat, brown the ground beef. Season the meat directly with the Everyday Beef Seasoning as it cooks. Drain any excess grease.
- Stir in the black beans, cannellini beans, the entire jar of salsa, diced tomatoes, and corn.
- Pour in the prepared CMM Beef Broth and stir to combine.
- Add the Taco Seasoning and Chili Seasoning. Stir well to ensure the spices are fully incorporated into the broth.
- Bring the soup to a gentle boil, then reduce the heat to low and simmer for 15–20 minutes to let the flavors meld together.
- Taste and adjust seasoning if needed.
- Ladle into bowls and garnish with your favorite toppings. For a dairy-free version, top with plenty of avocado and cilantro.
