Coconut Mango Chicken Bowls ingredients:
* 4 chicken breasts, sliced in half lengthwise
* 2 cups cooked basmati or jasmine rice
* 1/4 cup shredded sweetened coconut
* Mango Marinade:
* 1 mango
* 2 tbsp olive oil
* 2 tbsp lime juice
* 1 tbsp honey
* 1 tbsp Sriracha
* 2 cloves garlic minced
* 1 tsp salt
Corn mix:
* 1 1/2 cups Corn
* 1 can black beans, drained (optional) * 1 tbsp lime juice
* 3/4 tsp salt
INSTRUCTIONS:
Preheat oven to 350F or cook chicken in instant pot. Cook rice according to package directions. Blend ingredients for mango sauce together. Meanwhile, mix ingredients for corn mix. Remove chicken from the oven or instant pot, cut up and add mango sauce, stir to combine. Divide rice among four meal prep bowls. Top with coconut, corn mix, and chicken mixture.
