Slow Cooker Shredded Teriyaki Chicken

Ingredients:
- 2 lbs boneless, skinless chicken breasts or whole chicken thighs
- 4 tablespoons CMM Teriyaki Mix (divided: 3 tbsp for cooking + 1 tbsp for post-shredding)
- Non-stick cooking spray or olive oil (for greasing)
Optional Veggie Add-Ins (Add in the last 30–45 mins of cooking):

- 2 cups broccoli florets
- 1 bell pepper (any color), sliced into thin strips
- 1 cup sliced carrots or matchstick carrots
- 1 cup snap peas or snow peas
- 1 cup sliced mushrooms or canned bamboo shoots / water chestnuts
Instructions:
- Lightly grease the interior of your slow cooker with cooking spray or olive oil.
- Place the chicken in an even layer at the bottom of the slow cooker and sprinkle 3 tablespoons of CMM Teriyaki Mix directly over the top.
- Cover and cook on HIGH for 3–4 hours (or LOW for 6–7 hours) until the chicken is tender and pulls apart easily with a fork.
- If adding optional veggies, stir them into the slow cooker during the last 30–45 minutes of cooking so they become tender-crisp.
- Shred the chicken using two forks and mix thoroughly back into the natural cooking juices.
- Sprinkle the remaining 1 tablespoon of CMM Teriyaki Mix over the hot shredded chicken and toss well to coat in the glossy sauce.
- Serve hot over white rice, brown rice, or cauliflower rice, garnished with green onions and sesame seeds!
