Creamy Au Jus Mushroom & Shallot Orzo

Serves: 4–6 | Prep Time: 5 mins | Cook Time: 20 mins

One pot, big flavor! Our Creamy Au Jus Mushroom & Shallot Orzo cooks gluten-free orzo directly in rich CMM Au Jus broth with sautéed mushrooms and shallots. As it simmers, the starchy pasta creates its own luxurious, velvety sauce with zero gluten or heavy cream needed!

Ingredients:

  • 2 tablespoons olive oil
  • 1 large shallot, finely diced
  • 8 oz fresh mushrooms (cremini or button), sliced
  • 1 package (approx.12 oz) gluten-free orzo (such as Delallo)
  • 5 cups hot water
  • ⅓ cup CMM Au Jus Powder
  • Salt and fresh cracked black pepper, to taste

Instructions:

  1. In a measuring cup or bowl, whisk the hot water and ⅓ cup CMM Au Jus Powder together until fully dissolved to create your rich broth base.
  2. Heat olive oil in a large skillet or Dutch oven over medium heat. Add the diced shallot and sliced mushrooms; sauté for 4–5 minutes until soft and golden brown.
  3. Add the gluten-free orzo directly to the skillet and pour in the prepared CMM Au Jus broth. Stir well to combine.
  4. Bring the mixture to a boil over medium-high heat.
  5. Reduce heat to medium-low and simmer uncovered (or partially covered) for 15–16 minutes, stirring occasionally, until the orzo is tender and the liquid has thickened into a rich, velvety sauce.
  6. Season with salt and black pepper to taste. Serve hot immediately! (Note: The sauce will continue to thicken as it sits, so serving right away is recommended).
