One-Pan Queso Sausage Pasta

Ingredients:
- 12–16 oz beef sausage, sliced into rounds
- 3 bell peppers, sliced into strips
- 5 cups chicken broth (plus extra if needed)
- 16 oz Gluten-Free Pasta (Rotini or Penne work best)
- 2 tablespoons Clean Monday Meals Chili Seasoning
- 1/2 cup heavy cream
- 1 cup shredded cheddar or Mexican blend cheese
- Salt and black pepper to taste
Instructions:
- In a large, deep skillet or Dutch oven, sauté the sliced beef sausage and bell peppers over medium-high heat. Cook until the sausage is browned and the peppers have softened and developed some color.
- Pour in the 5 cups of chicken broth and add the CMM Chili Seasoning. Stir to combine.
- Add the dry gluten-free pasta directly into the pot. Bring the liquid to a boil.
- Once boiling, reduce the heat to a simmer. Let the pasta cook, stirring occasionally to prevent sticking.
- Cook until the noodles are al dente and the broth has been mostly absorbed by the pasta. **Pro-Tip: Watch closely! Gluten-free pasta varieties absorb liquid differently. If the liquid is gone but the noodles are still firm, add another 1/2 cup of broth and continue simmering.
- Once the noodles are perfectly cooked and the liquid has reduced to a thick starchy base, turn off the heat.
- Pour in the heavy cream and the shredded cheese. Stir vigorously until the cheese is completely melted and the sauce is smooth and "queso-like."
- Serve hot! The sauce will continue to thicken as it sits.
