One-Pan Queso Sausage Pasta

Serves: 4–6 | Prep Time: 5 minutes | Cook Time: 15–20 minutes

One pan, 20 minutes, and zero stress! Our CMM Queso Sausage Pasta uses our signature Chili Seasoning to create a smoky, cheesy sauce that the whole family will love. Best part? Only one dish to wash!

Ingredients:

  • 12–16 oz beef sausage, sliced into rounds
  • 3 bell peppers, sliced into strips
  • 5 cups chicken broth (plus extra if needed)
  • 16 oz Gluten-Free Pasta (Rotini or Penne work best)
  • 2 tablespoons Clean Monday Meals Chili Seasoning
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar or Mexican blend cheese
  • Salt and black pepper to taste

Instructions:

  1. In a large, deep skillet or Dutch oven, sauté the sliced beef sausage and bell peppers over medium-high heat. Cook until the sausage is browned and the peppers have softened and developed some color.
  2. Pour in the 5 cups of chicken broth and add the CMM Chili Seasoning. Stir to combine.
  3. Add the dry gluten-free pasta directly into the pot. Bring the liquid to a boil.
  4. Once boiling, reduce the heat to a simmer. Let the pasta cook, stirring occasionally to prevent sticking.
  5. Cook until the noodles are al dente and the broth has been mostly absorbed by the pasta. **Pro-Tip: Watch closely! Gluten-free pasta varieties absorb liquid differently. If the liquid is gone but the noodles are still firm, add another 1/2 cup of broth and continue simmering.
  6. Once the noodles are perfectly cooked and the liquid has reduced to a thick starchy base, turn off the heat.
  7. Pour in the heavy cream and the shredded cheese. Stir vigorously until the cheese is completely melted and the sauce is smooth and "queso-like."
  8. Serve hot! The sauce will continue to thicken as it sits.
