Easy Ground Beef Stroganoff

Comfort food but make it easy. We're serving up classic beef stroganoff with ground beef for a super-fast weeknight meal. The sauce is so rich and creamy, you'd never guess how simple it was to make.
Ingredients:

1 tablespoon olive oil or butter

1 ½ pounds ground beef

2 teaspoons Clean Monday Meals Everyday Beef Seasoning

1 cup sliced fresh mushrooms

3 cups hot water

2 teaspoons Clean Monday Meals Beef Bouillon

2 tablespoons Clean Monday Meals Dried Onions

1 cup sour cream, plain Greek yogurt, or a dairy-free sour cream alternative (optional, for classic tang)

Salt and black pepper to taste

Cooked egg noodles or rice, for serving

Fresh chopped parsley for garnish (optional)
Instructions:

Brown the Beef: Heat the oil or butter in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon. Season the beef with the Everyday Beef Seasoning as it cooks until it is browned and cooked through. Drain any excess fat.

Sauté Mushrooms: Add the sliced mushrooms to the skillet with the beef. Cook for 3-5 minutes, stirring occasionally, until the mushrooms are tender and have released their moisture.

Make the Sauce: In a separate bowl, whisk together the hot water and Clean Monday Meals Beef Bouillon until dissolved. Add the Clean Monday Meals Cream of Mushroom powder and the Dried Onions and whisk again until the mixture is smooth.

Combine and Simmer: Pour the sauce mixture into the skillet with the beef and mushrooms. Stir everything together and bring it to a simmer. Reduce the heat to low and let it cook for 5-7 minutes, stirring occasionally, until the sauce has thickened.
- Finish and Serve: Turn the heat off or remove the skillet from the burner. Immediately stir in the sour cream, Greek yogurt, or dairy-free alternative, and mix until fully incorporated. The residual heat of the pan will be enough to warm it without causing it to curdle. Season with salt and pepper to taste. Serve the stroganoff hot over cooked egg noodles or rice and garnish with fresh parsley. TIP: If you want to thin the sauce down, simply add in a little bit of water until it is the desired consistency.
