
Creamy Chicken Pot Pie Casserole

The savory sauce is thanks to the incredible Clean Monday Meals Cream of Chicken and Zest & Herb Seasoning. Get ready for pure nostalgia!
Ingredients:
For the Filling:
- 2 tablespoons butter (or plant-based butter substitute)
- 1 medium yellow onion, diced
- 1 cup chopped carrots
- 1 cup chopped celery
- 3 cups cooked chicken, shredded or diced
- 1 cup frozen peas
- 2 teaspoons Clean Monday Meals Zest & Herb Chicken Seasoning
- 1 cup Clean Monday Meals Cream of Chicken powder
- 3 cups hot water
- 1/2 cup milk (or unsweetened, plain dairy-free milk alternative)
For the Gluten-Free Topping:
- 2 cups Gluten-Free All-Purpose Flour Blend
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 tablespoon Clean Monday Meals Ranch Powder (Optional)
- 1/2 cup cold butter (or cold, solid plant-based butter substitute), cubed
- 1 cup milk (or dairy-free milk alternative, chilled)
Instructions:
- 
Prepare the Filling Base: 
- 
Sauté Vegetables: Melt the butter in a large pot or Dutch oven. Add the onion, carrots, and celery. Sauté over medium heat for 8–10 minutes until tender. 
- 
Make the Gravy: In a separate bowl, whisk together the Cream of Chicken powder and the hot water until smooth. Stir in the Zest & Herb Chicken Seasoning and the 1/2 cup of milk. 
- 
Combine & Thicken: Pour the gravy mixture into the pot with the vegetables. Bring to a gentle simmer and cook for 2–3 minutes until the sauce slightly thickens. Remove from heat.

Finish Filling: Stir in the cooked chicken and frozen peas. Season with additional salt and pepper, if desired. 
- 
Prepare the Topping: 
- 
Combine Dry Ingredients: In a large bowl, whisk together the GF flour, baking powder, salt, and the optional CMM Ranch Powder. 
- 
Cut in Butter: Cut the cold butter cubes into the flour mixture until the mixture resembles coarse crumbs. 
- 
Form Dough: Gradually stir in the 1 cup of chilled milk alternative until a soft dough forms. Do not overmix. 
- 
Assemble and Bake: 
- 
Preheat: Preheat your oven to 400°F (200°C). 
- 
Assemble: Pour the entire chicken filling mixture into a greased 9x13 inch casserole dish. Drop spoonfuls of the biscuit dough mixture evenly over the top of the filling. 
- 
Bake: Bake for 35–40 minutes, or until the topping is golden brown and the filling is actively bubbling. 
- Serve: Let the casserole rest for 10 minutes before serving.
