Who’s ready for back-to-school lunch and after-school snack ideas?
I can’t believe it’s already that time! These Protein peanut butter bites are always a family favorite at our house. I am a peanut butter snob, and I have been a huge fan of @skippybrand natural peanut butter for a long time. It’s all we use at our house and it makes the best snacks. It’s a plant-based protein with 7 grams of protein per serving! I’ve included the recipe for our favorite energy bites below.
Ingredients:
2 cups gluten-free old fashion oats
1/2 cup coconut, shredded
1/2 cup ground Flaxseed
1 cup rice crispy cereal
1 cup Peanut Butter (@skippybrand)
1/2 cup honey
1/4 cup pure maple syrup
1/2 cup mixture of choice we love using mini m&ms or mini chocolate chips.
Instructions:
In a blender, add half of the rolled oats and pulse for a few seconds.
In a mixing bowl or Bosch mixer/Kitchen Aid, combine all ingredients and mix until well combined.
Roll into the size balls you prefer. We make some smaller and some bigger. You can also use a cookie scoop.
