Teriyaki Roasted Carrots

Teriyaki Roasted Carrots

Forget boring boiled carrots! Our CMM Teriyaki Roasted Carrots are seasoned to perfection and roasted until deeply caramelized. Using our dry Teriyaki Marinade, it’s a savory-sweet side dish that steals the show.

Ingredients:

  • 1 lb carrots (washed, peeled, and tops trimmed)
  • 2 tablespoons olive oil
  • 1.5 tablespoons Clean Monday Meals Teriyaki Marinade (Dry Seasoning)
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt (to taste)
  • Optional: Toasted sesame seeds or chopped green onions

Instructions:

  1. Preheat your oven to 400°F. Line a large baking sheet with parchment paper or foil.
  2. Toss the carrots with olive oil and a pinch of salt directly on the baking sheet. Spread them out in a single layer.
  3. Roast the carrots for 10–12 minutes. This initial roast softens the carrots and provides a base for the dry seasoning to stick to.
  4. While the carrots roast, mix the dry CMM Teriyaki Marinade and the brown sugar in a small bowl.
  5. Remove the baking sheet from the oven. Evenly sprinkle the teriyaki-sugar mixture over the warm carrots. Use tongs to toss them until the dry seasoning is well distributed and beginning to melt into the oil.
  6. Return the carrots to the oven for another 10–15 minutes.
  7. Continue roasting until the carrots are completely softened and the seasoning has caramelized into a dark, sticky coating. Watch closely in the final minutes to ensure the sugars don't scorch.
  8. Remove from the oven, sprinkle with a final touch of salt if desired, and serve hot!
