Clean eating doesn't have to be complicated. This Powerhouse Salad uses diced veggies and a simple SPOG dressing to create a nutrient-dense meal in minutes. It’s crunchy, savory, and the perfect side for any protein!

Ingredients:

  • 4 Roma tomatoes, chopped
  • 1 large English cucumber, diced
  • 2 bell peppers (any color), diced
  • 1/2 red onion, finely diced
  • 1 cup shelled edamame (thawed)
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon Clean Monday Meals SPOG Seasoning (plus more to taste)

Instructions:

  1. Add the chopped Roma tomatoes, diced English cucumber, bell peppers, finely diced red onion, and edamame to a large mixing bowl.
  2. In a small jar or bowl, whisk together the olive oil, white wine vinegar, and 1 tablespoon of Clean Monday Meals SPOG Seasoning until the dressing is well combined.
  3. Pour the dressing over the vegetables and toss gently until every piece is evenly coated.
  4. Taste the salad and add an extra sprinkle of SPOG as needed to reach your desired flavor level.
  5. Serve immediately for maximum crunch or let it sit for 10 minutes to allow the vinaigrette to marinate the vegetables.
