@lainiecooks_ crushed this recipe on every level!! It's SO FREAKING GOOD!! It's such an easy prep-ahead breakfast or snack. It's so creamy, fresh, naturally sweet, and packed with protein and fiber. I'm in love and will be making it on repeat! I was so sad Kevin even loved it because my jars disappeared fast!
Ingredients:
- 1 1/2 cups fresh raspberries, mashed (plus more for topping)
- 1 cup Greek yogurt (or dairy free yogurt)
- 1/2 cup milk (use coconut or almond milk for dairy free)
- 4 tbsp honey (add more if you like it sweeter)
- 1/4 cup chia seeds
Instructions:
- Mash the raspberries in a bowl until mostly smooth.
- Add the Greek yogurt, milk, honey, and chia seeds.
- Stir until fully combined.
- Cover and refrigerate overnight (or at least 4 hours) until thick and pudding-like.
- Stir before serving and top with extra raspberries.
