Frosted Peanut Butter Bars

Forget the store-bought cups—these CMM Frosted Peanut Butter Bars are the real deal! We’ve got a chewy GF oat base, a sweetened double-thick peanut butter layer, and a silky chocolate buttercream on top. It's the ultimate clean-eating indulgence!
Ingredients:
The Oat Base:
- 1 cup butter, softened
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 1 tsp vanilla
- 1 tsp baking soda
- ½ tsp salt
- 2 cups Gluten-Free Flour
- 2 cups Gluten-Free Quick Oats
The Creamy Peanut Butter Layer:
- 1 ½ to 2 cups creamy peanut butter
- ¼ cup powdered sugar
The Chocolate buttercream Frosting:
- ½ cup butter, softened
- 3 cups powdered sugar
- 1/3 cup cocoa powder
- ¼ cup milk (or dairy-free alternative)
- 1 tsp vanilla
Instructions:
- Preheat your oven to 350°F and grease a 9x13-inch baking pan.
- Cream the softened butter, brown sugar, and white sugar together. Add eggs and vanilla, mixing until smooth.
- Stir in the baking soda, salt, GF flour, and GF oats. Mix until a dough forms.
- Press the entire dough mixture into the bottom of the pan. Bake for 12–15 minutes until the edges are just golden. Do not overbake!
- Prepare the PB Layer: While the base is warm, whisk together the peanut butter and 1/4 cup powdered sugar.
- Spread: As soon as the base comes out of the oven, spread the peanut butter mixture over the top. Let the bars cool completely.
- Make the Frosting: In a separate bowl, beat the softened butter, 3 cups powdered sugar, cocoa powder, vanilla, and milk until light and fluffy.
- Finish: Spread the chocolate buttercream over the cooled peanut butter layer.
- Set: Chill in the fridge for 30 minutes to help the layers set before slicing.
