Ingredients:
- 6–8 lb bone-in or boneless pork butt (pork shoulder)
- 2 tablespoons mustard (or olive oil, used as a binder)
- 4–6 tablespoons CMM Bold Bee BBQ Seasoning (generously applied)
- Optional Add-On: CMM Billionaire BBQ Sauce for serving
Instructions:
The Prep (For All Methods):
- Pat the pork butt completely dry with paper towels.
- Rub the mustard all over the meat to create a binder.
- Coat the entire pork butt heavily with the CMM Bold Bee BBQ Seasoning, pressing the spices firmly into the meat so every inch is covered.
*Choose Your Cooking Method*
Method 1: The Smoker (Traditional BBQ Bark)
- Preheat your smoker to 225°F using a sweet wood like apple, cherry, or pecan.
- Place the seasoned pork butt directly on the grates, fat side up.
- Smoke for about 5–6 hours until the internal temperature hits 165°F and a beautiful dark crust (bark) has formed.
- Remove the pork, wrap it tightly in heavy-duty aluminum foil or butcher paper, and place it back into the smoker.
- Continue cooking at 225°F for another 3–4 hours until the internal temperature reaches 200°F–205°F and a meat thermometer slides in like butter.
Method 2: The Oven (Low & Slow Roast)
- Preheat your oven to 275°F.
- Place the seasoned pork butt fat side up in a large Dutch oven or a heavy roasting pan. Pour ¼ cup of water or apple cider into the bottom of the pan (do not pour it over the meat).
- Cover tightly with the lid or a double layer of foil.
- Roast for 6–8 hours until the pork is tender and reaches an internal temperature of 200°F–205°F.
Method 3: The Slow Cooker (Effortless Comfort)
- Place the seasoned pork butt into the bottom of your slow cooker.
- Pour ¼ cup of apple cider vinegar or water around the base of the pork.
- Cover and cook on LOW for 8 to 10 hours until the meat is completely tender and falling apart.
The Finish:
- Remove the pork from the heat source and let it rest for 20–30 minutes before shredding.
- Discard the bone and any excess fat, then use two forks to shred the meat into succulent strands.
**The Billionaire Finish: For the ultimate flavor experience, toss the warm, shredded pork in a few generous spoonfuls of our homemade CMM Billionaire BBQ Sauce and serve extra sauce on the side for dipping!
