Teriyaki Chicken & Vegetable Stir-Fry

Our Clean Teriyaki Chicken & Vegetable Stir-Fry uses our CMM Teriyaki Mix to create a glossy, savory-sweet sauce without any gluten, high-fructose corn syrup, or artificial additives. Tossed with juicy chicken and fresh veggies, it's the ultimate quick weeknight win!

Ingredients:

The Teriyaki Sauce:

  • ⅓ cup water
  • 3 tablespoons CMM Teriyaki Mix
  • 1 tablespoon gluten-free tamari or coconut aminos

The Stir-Fry:

    • 1.5 lbs chicken breast (or thighs), thinly sliced into bite-sized strips
    • 1.5 tablespoons avocado oil or olive oil (divided)
    • 2 cups broccoli florets
    • 1 bell pepper (any color), sliced into thin strips
    • 1 cup snap peas or sliced carrots
    • Sliced green onions & sesame seeds for garnish

Instructions:

  1. Whisk the water, CMM Teriyaki Mix, and tamari together in a small bowl until completely smooth. Set aside.
  2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  3. Add the sliced chicken in a single layer and sear for 4–5 minutes until browned and cooked through. Remove the chicken from the skillet and set aside on a plate.
  4. Add the remaining ½ tablespoon of oil to the same skillet along with the broccoli, bell pepper, and snap peas. Sauté for 3–4 minutes until tender-crisp.
  5. Return the cooked chicken to the skillet with the vegetables.
  6. Give the teriyaki sauce mixture a quick stir, then pour it directly into the hot skillet.
  7. Toss continuously for 1–2 minutes as the sauce bubbles, thickens, and coats the chicken and vegetables in a glossy finish.
  8. Remove from heat, garnish with sliced green onions and sesame seeds, and serve hot over rice or cauliflower rice!
