
Spanish Rice

Ingredients:
- 1.5 cups uncooked Jasmine rice (or long-grain white rice)
- 2 tablespoons olive oil or avocado oil
- 1/2 cup tomato sauce (plain)
- 2 tablespoons Clean Monday Meals Taco Seasoning
- 1 teaspoon garlic, minced
- 2.5 cups chicken broth (or water)
- 1/4 cup finely diced white onion
- Optional: Fresh cilantro and lime juice for garnish
Instructions:
- Heat the oil in a large skillet or saucepan over medium heat.
- Add the dry rice and diced onion to the pan. Stir frequently for 3–5 minutes until the rice turns a light golden brown and smells toasted.
- Stir in the minced garlic and Taco Seasoning, tossing for about 30 seconds until fragrant.
- Pour in the tomato sauce and the chicken broth. Stir well to ensure the seasoning is fully incorporated.
- Bring the mixture to a boil, then immediately reduce the heat to low.
- Cover with a tight-fitting lid and simmer for 15–18 minutes, or until all the liquid has been absorbed and the rice is tender.
- Remove from heat and let the rice sit, covered, for 5 minutes.
- Fluff the rice with a fork and garnish with fresh cilantro and a squeeze of lime before serving.
