Citrus Taco Meat Marinade

Yields: Ideal for 1.5 to 2 lbs of meat

This versatile, bright marinade works beautifully on flank steak, chicken, or pork. The combination of citrus and Clean Monday Meals Taco Seasoning acts as a natural tenderizer while infusing the meat with deep, smoky flavor.

Ingredients:

  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 1/4 cup olive oil or avocado oil
  • 2 tablespoons Clean Monday Meals Taco Seasoning
  • 2 tablespoons soy sauce (or coconut aminos)
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon minced garlic

Instructions:

  1. Whisk together the orange juice, lime juice, oil, Taco Seasoning, soy sauce, cilantro, and garlic in a medium bowl or large gallon-sized bag.
  2. Place your choice of meat into the marinade, ensuring every piece is completely coated.
  3. Seal and refrigerate. For beef, marinate for 2 to 8 hours. For chicken, 30 minutes to 2 hours is ideal.
  4. Remove the meat from the marinade and discard the excess liquid before cooking.
  5. Grill over high heat or sear in a hot skillet until your desired doneness is reached and a nice char has formed.
  6. Let the meat rest for at least 5 minutes before slicing against the grain for maximum juiciness.

Portioning Guide:

    • Chicken Breast or Thighs: Perfect for 2 lbs. It provides enough liquid to fully submerge the pieces in a gallon-sized bag or bowl.
    • Flank or Skirt Steak: Perfect for one large steak (about 1.5–2 lbs). Since these are flat cuts, the liquid coats the surface area very effectively.
    • Shrimp: This amount can actually handle up to 3 lbs of shrimp since they don't need to soak for long and have less surface area than a thick steak.
