These Baked Chicken Legs are the perfect weeknight win! They are simple, gluten-free, and use avocado oil spray instead of heavy oil. The savory, herbaceous flavor comes from the incredible Clean Monday Meals Zesty Herb Seasoning. Prep them ahead and bake when you get home!

Ingredients:

  • 6-8 chicken drumsticks (legs)
  • 1/2 cup milk (dairy-free milk alternative)
  • 2 1/2 tablespoons Clean Monday Meals Zesty Herb Chicken Seasoning, divided
  • 1/2 cup Gluten-Free All-Purpose Flour
  • 1/2 cup Gluten-Free Panko Breadcrumbs
  • Avocado oil cooking spray (or a neutral oil in a mister)
  • Salt and black pepper, to taste

Instructions:

  1. Marinate/Soak the Chicken: Place the chicken drumsticks in a medium bowl. Pour the dairy-free milk alternative over the chicken. Add 1 1/2 tablespoons of the Zesty Herb Chicken Seasoning and stir to coat the chicken completely. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 4 hours).
  2. Prepare Breading: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray. In a shallow dish, whisk together the GF flour, GF Panko Breadcrumbs, and the remaining 1 tablespoon of Zesty Herb Chicken Seasoning.
  3. Bread the Chicken: Remove the chicken legs from the marinade, letting any excess liquid drip off (do not rinse). One by one, dredge each drumstick completely in the panko mixture, pressing lightly to ensure the breading adheres evenly.
  4. Bake: Place the breaded chicken legs on the prepared baking sheet in a single layer. Generously spritz the top of all the chicken pieces with avocado oil spray.
  5. Finish: Bake for 30–40 minutes, turning the chicken halfway through, until the coating is deeply golden brown and crispy, and the internal temperature of the chicken reaches 165°F (74°C).
  6. Serve: Let the chicken rest for a few minutes before serving hot.
