Anti-Inflammatory Stroganoff

Ingredients:
•1 lb ground turkey
•1 onion, chopped
•1 package mushrooms, sliced
•1 can coconut milk
•1 red bell pepper, roasted, finely chopped or pureed
•1 Tbsp paprika
•2 cloves garlic, pressed

Instructions:
1. Brown turkey in skillet with onion and sliced mushrooms. 

2. Stir in coconut milk, garlic, roasted red pepper, and paprika. Simmer 5-10 minutes. Serve over quinoa. 

3. To roast peppers, cut in half lengthwise, score the inside with a fork, and place on a cookie sheet skin side up.

4. Place 6 inches below heating element in oven and broil on high until skin is mostly black, about 10 minutes.

5. Allow to cool, then peel off skins and discard.

6. Chop peppers and add to dish.

Note: You can get Deliciously Dill by The Spice Hunter spice at a Harmon’s grocery store. This spice contains onion, dill, lemon peel, ginger, garlic, and chives. Plain dill is sold at most stores.
