Turkey Sausage with Sautéed Veggies

Ingredients:
• 1 lb ground turkey sausage
• 1 sweet potato, peeled and cubed small
• 1 yellow, orange, or green bell pepper, chopped
• ½ onion, chopped
• 4 stalks of celery, chopped
• 2-3 zucchinis, sliced or cubed
• ¼ tsp. garlic granules
Instructions:
1. Brown turkey sausage in large skillet, then drain.
2. Add sweet potatoes, cover, and cook for 3-4 minutes on medium heat.
3. Add pepper, onion, celery and zucchini.
4. Sprinkle with garlic granules and increase heat to medium-high.
5. Cook until the vegetables are crisp-tender. *Overcooking will result in “mushy” vegetables.
