Peanut Butter and Banana Baked Oatmeal Bars

Ingredients: 

  • 1 ½ cups GF oats
  • 1 tsp baking powder
  • ½ tsp sea salt
  • 1 tsp ground cinnamon
  • 2 overripe bananas mashed
  • ¼ cup creamy peanut butter
  • 1 tsp vanilla extract
  • ¼ cup pure maple syrup
  • 1 large egg lightly beaten
  • ¾ cup milk
  • 1 scoop vanilla protein powder
Toppings:
  • ¼ cup creamy peanut butter melted
  • Sliced bananas on top
Instructions:
  1. Preheat oven to 350°F. Grease a 9x9” square baking pan and set aside.
  2. In a small bowl mash bananas.
  3. In a large bowl mix add in all ingredients and stir until combined.
  4. Pour the mixture into a lightly greased 9x9” baking pan.
  5. Bake at 350° for 25 minutes. Or until the top slightly springs back when touched and the edges are just barely brown.
  6. Melt the extra peanut butter and drizzle on top!
  7. Cut into squares and enjoy!
  8. Store in refrigerator, reheat in microwave or enjoy cold!
