Ingredients:
1 cup Greek yogurt (or dairy free Greek yogurt)
1/2 cup Milk (use coconut or almond for dairy free)
1/2 cup Melted butter (use oil for dairy free)
3 Eggs
2 tsp Vanilla extract
1 1/2 cup Gluten-free all-purpose flour
2 scoop CMM smooth vanilla protein powder
1/2 cup Light brown sugar
1 tsp Baking soda
1/2 tsp Salt
1/4 cup Sprinkles

Instructions:
  1. Preheat the oven to 400°F. Spray mini muffin tins with cooking spray. You may need to bake in several batches.
  2. In a large bowl, whisk together the yogurt, milk, melted butter, eggs, and vanilla until just blended.
  3. Add the gluten-free flour, CMM protein powder, brown sugar, baking soda, and salt. Stir until just combined (do not overmix).
  4. Fold in the sprinkles gently.
  5. Fill the muffin cups ¾ full with batter.
  6. Bake for 9–11 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
