So sorry, it’s been a minute since I’ve been able to get recipes out to you. We have been home from the hospital for one week today. So much has happened, and I’ve just taken this week to learn and take care of my family. I will plan to meal prep this upcoming Monday. As I will continue to meal prep for myself gluten and dairy-free meals, I also plan to prep easy things for Kolbie to have on hand as well. I will continue to share our journey with Kolbie girl because food plays a massive role in her life now too.
Inspired by my love for the double-double protein style from In-N-Out. Although it doesn’t taste like a hamburger it still hits the spot and is very filling.
Gluten-Free In-N-Out Casserole
Ingredients:
- 1 lb grass-fed ground beef
- 1 cup white onion, diced
- 2 potatoes, diced (about 4 cups)
- 1 can diced tomatoes, drained well
- 1 green pepper, diced
- 1/2 cup chopped dill pickles
- 1/2 cup IN N’ OUT special sauce (instructions below)
For Topping:
- Shredded romaine lettuce
- A little extra drizzle of Special Sauce
Instructions:
- Add the diced white onion and ground beef into a large skillet over medium heat. Cook until the onions are translucent and the meat browned. While it’s cooking, preheat the oven to 350 degrees F and add the diced potatoes, diced green pepper, chopped pickles, and diced tomatoes into a large casserole dish.
- When the ground beef and onion mixture fully cooked, drain well to remove the liquid. Return it to the pan and then stir in the Special Sauce. Add it to the casserole dish with the veggies.
- Next, stir everything together to combine the meat with the vegetables.
- Make sure the casserole is arranged in an even layer in the dish and then cover with foil.
- Place in the oven and bake for 1 hour, or until the potatoes can be pierced with a fork.
- Remove from the oven and top with your burger toppings and additional special sauce.
- Enjoy!!
Special Sauce Ingredients:
- 1/4 cup avocado oil-based mayo
- 1/4 cup ketchup
- 1/4 cup relish.
- 1 tsp dried onion flakes.
- Salt and pepper to taste.
Instructions:
- Combine all.
