Cornbread

Serves: 9 (Standard 8x8 inch pan) | Prep Time: 10 minutes | Cook Time: 25-30 minutes

Cornbread just got a major glow-up! We added Clean Monday Meals Vanilla Protein to make this bread sweeter, moister, and packed with extra protein. It’s the perfect GF/DF side that doubles as a tender, vanilla-infused treat. (Pro tip: Don't skip that final melted butter brush!)

Ingredients:

  • 1 cup cornmeal (finely ground)
  • ¾ cup all-purpose Gluten-Free Flour Blend
  • ¼ cup Clean Monday Meals Vanilla Protein Powder
  • ¼ cup granulated sugar (or a dry sugar substitute)
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 large egg
  • 2 cups milk (or dairy-free milk alternative, such as almond, coconut, or oat)
  • ¾ cup melted butter (or melted plant-based butter substitute/oil), divided
  • Additional butter and honey for serving

Instructions:

  1. Preheat and Prep: Preheat your oven to 400∘F (200∘C). Lightly grease an 8x8 inch baking pan (or line with parchment paper).
  2. Combine Dry Ingredients: In a large bowl, whisk together the cornmeal, GF flour blend, Clean Monday Meals Vanilla Protein Powder, sugar, baking powder, and salt until well combined.
  3. Combine Wet Ingredients: In a separate medium bowl, whisk together the egg and milk alternative.
  4. Mix Batter and Add Fat: Pour the wet ingredients into the dry ingredients and mix just until combined (do not overmix). Add ¼ cup of the melted butter (or oil) to the batter and stir quickly to incorporate.
  5. Prepare Pan and Bake: Pour another ¼ cup of the melted butter into the prepared pan and swirl it around to coat the bottom and sides. Immediately pour the batter into the prepared pan. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. Optional Butter Finish: While the cornbread is cooling, melt the remaining ¼ cup of butter. Immediately after removing the cornbread from the oven, brush the top generously with the melted butter.
  7. Serve: Let the cornbread cool in the pan for 5 minutes before slicing and serving warm with additional butter or honey.
