"Almost" Apple Pie

Ingredients:
Filling:
•5–6 large Honeycrisp, Fuji, or any sweet red apple (peeled + chopped)
•Juice of ½ lemon
•2–3 tbsp melted coconut oil
•1 tsp pumpkin pie spice
•½ tsp sea salt
Topping:
•3 cups blanched almond flour
•1 cup sliced almonds
•¼ cup melted coconut oil
•1 tsp cinnamon
•1 tsp vanilla extract
•½ tsp sea salt
Instructions:
1. Preheat oven to 350°F.
2. Toss apples with filling ingredients and transfer to baking dish.
3. Mix topping ingredients in separate bowl and layer over apples.
4. Bake 30–40 min. until golden and soft. *Cool 15 min. before serving.
