Turkey Burrito Bowl

Ingredients:

  • 1 cup diced onion
  • 1/2 pound lean ground turkey
  • 1 cup brown rice
  • 2 cups salsa, no sugar added
  • 2 teaspoons taco seasoning (recipe for taco seasoning below πŸ‘‡πŸ»)
  • 1 (15-ounce) can black beans, drained
  • I (15-ounce) can corn kernels
  • 2 cups diced tomato
  • 1/4 teaspoon ground pepper
  • 1/2 cup grated cheddar cheese, reduced-fat

Taco Seasoning:

  • 1 tablespoon chili powder
  • 1/2 teaspoon dried minced onion
  • 1/2 teaspoon dried minced garlic
  • 1 teaspoon oregano
  • 1 1/2 teaspoons dried cilantro
  • 1 teaspoon paprika
  • 1 1/2 teaspoons ground cumin seeds
  • 1 teaspoon black pepper

Instructions:

  1. Over medium heat, in a skillet, cook the onion and ground turkey. The turkey should be cooked until it’s no longer pink. Drain the turkey. Add the turkey, cooked rice, 1 cup salsa, 1 cup diced tomatoes, taco seasoning, corn, and beans. Bring to a boil, then lower the heat and simmer for about 5 minutes.
  2. Mix in the cheese. It will melt with the heat.
